"Grater Tots" - How to Use Up CSA Summer Squash!

"Grater Tots"
Ingredients:
1 c grated zucchini or summer squash
1/4 c grated or powdered Parmesan cheese
1/4 c bread crumbs
1/2 tsp salt
pepper to taste
1 egg
1/4 onion, diced
1 tsp minced garlic (or 1 clove, minced)

Directions:
Preheat oven to 400 F

Step 1: Combine all dry ingredients (bread crumbs, cheese, salt and pepper.) Add all the rest of the ingredients and mix well to coat evenly.


Step 2: Pack zucchini mixture into greased or sprayed mini muffin tin(s.) Tamp down lightly, but don't pack too tightly. Should make roughly 12 Tots.


Step 3: Bake at 400 F for 16-18 minutes.

The Verdict:
I quite liked them, but Hubby thought they were weird, and Z never tried them. I ended up eating them all!

I reheated them just like pizza: Put them on a baking tray or a baking tile and place in cold oven. Set oven to 350 F, and start checking on them when your oven reaches temp. May need a few extra minutes.

I also tried them cold straight out of the fridge, and they were okay. I liked hot better, but these would be fine in a chilled or room temperature lunch.
They were kind of an ordeal, effort-wise, for just 12 tots. At least for me. I'm kind of lazy like that. So I might try doing multiple batches at once and freezing some. I bet Baby will like these though, when she is old enough for this kind of chunkage. She loves savory dishes.
