Avengers: Endgame Spoiler-Free Zone!

I was given 2 free tickets to a pre-screening of Avengers: Endgame for a review, and whoa! We were not disappointed! Since it was on a weekday morning and I'd brought her to the early showing of Avengers: Infinity War last year, I brought my now-1st-grader to watch it with me. We wore our matching Captain America dresses, brought our Spider-Man hat and gloves, and a plastic Thor hammer (which the theater employees kindly turned a blind eye to. They have a strict "no weapons" policy. They probably figured a 7-year-old who looks like a 5-year-old carrying a ginormous hammer that clearly wasn't too heavy for her probably wasn't a threat to anyone...) We brought a blanket and our coats (we always get chilly during movies,) and hit the restroom before hunkering down with our popcorn and drinks for a 3-hour marathon.

Infinity War left us with a big loss for the heroes - and the world. Ant Man and Wasp left us with Scott trapped in the quantum realm as the Pyms all turned to dust. How does one deal with the aftermath of losing half of everyone they know? How does the world react? And how does a hero move forward? Endgame at first starts where Infinity War left off, but then jumps five years ahead. Which is when we forgot we had snacks and drinks, we were so riveted for the next few hours! Pretty much nonstop crying, laughing, or action scenes! I can't say much about the plot, since the whole movie is pretty much back-to-back spoilers. But I can say that there are flashbacks and clips from prior movies, so when you see dusted or dead characters in the previews or promotion posters, it doesn't mean they're "back." Pretty much every past character appears in the movie at one time or another (Vision and Odin being the only exceptions I can think of...) And that contrary to what popular internet memes would like, Ant Man does not shrink and crawl up Thanos' butt...

The basic non-spoilery plot is that they want to get the gauntlet back from Thanos and undo what he did, but some people have moved on and don't want to risk changing the present, while others figure that if they failed once, they'll only fail again.

Captain Marvel made a great addition to the Avengers, and when they get angry that she wasn't there when they needed her, she adroitly points out that Earth isn't the only planet out there... [Fun Fact: they had to film Brie Larson's Endgame scenes before filming began for the Captain Marvel movie - the directors did a great job keeping her true to a character that the Captain Marvel directors hadn't even had a chance to explore yet!]

Where Infinity War left us feeling like we were stopping in the middle of the story, Endgame left me with closure, even though it was bittersweet. In order to succeed, the heroes have to lose. And the cost is very high, and very heartbreaking. My daughter gets anxious during tense or exciting scenes, and clings to me, but I spent the whole movie clinging to her as well, and her hair was damp with my tears by the end. There were heart-wrenching moments, and beautiful moments, and a few happy endings - or as happy as one could be, under the circumstances. It was an epic, exhausting, and rewarding experience, and I feel honored that Marvel created this universe for us and spent so much love and time showing it to us.

We had some time to kill before the movie, so we did some fun poses in our cosplay, and fun editing afterward!

Remember - Doctor Strange saw Endgame fourteen-million six-hundred and five times, and didn't reveal any spoilers. So please, don't spoil this epic adventure that they've spent so much effort to keep secret so everyone can enjoy it for the first time.

Divided We Fall - Captain America: Civil War Movie Review

I was invited to an advance screening of the new Marvel Captain America: Civil War movie and given two tickets in exchange for a review. All opinions are my own.


Marvel’s “Captain America: Civil War” finds Steve Rogers leading the newly formed team of Avengers in their continued efforts to safeguard humanity. But after another incident involving the Avengers results in collateral damage, political pressure mounts to install a system of accountability, headed by a governing body to oversee and direct the team. The new status quo fractures the Avengers, resulting in two camps—one led by Steve Rogers and his desire for the Avengers to remain free to defend humanity without government interference, and the other following Tony Stark’s surprising decision to support government oversight and accountability.
Get ready to pick a side and join the nonstop action playing out on two fronts when Marvel’s “Captain America: Civil War” opens in U.S. theaters on May 6, 2016.

Let me start out with some advice - if you haven't seen Captain America: Winter Soldier or Avengers: Age of Ultron, you'll be missing a lot of important back story. Out of all the Marvel movies, guess which two I haven't seen yet? Sigh. I was totally lost. "S.H.I.E.L.D. did what now?" "Who the what?" It was very difficult to sit still and watch quietly and not pester my husband the whole time to fill in the back story!
You'll probably want to have seen the other previous Captain America and Avengers movies as well, which means that seeing the other Avengers-characters' (Thor, Iron Man, Hulk) movies, for important back-story too.. And while Ant-Man isn't required viewing before seeing him appear here, it's fun to know more about him! (They've rebooted the Spider-Man storyline for this movie, so other than watching the previous movies for fun, they won't apply here.) So if you haven't seen them yet, have a movie marathon weekend! Worth it!

I've always had difficulty with the "good guy vs good guy" scenarios in comics and the corresponding movies, because they've all had pretty weak premises to me. It takes a lot for friends to turn on one another so violently. They seem scripted - like the dispute is there because the writers wrote it that way, and not because it is what those characters would actually have chosen to do. Sure, they come up with "reasons." But they feel very manufactured to me.
So I went into the theater expecting to be annoyed with this here too, but I must say, they did a great job making the sides and choices fairly believable in this movie! I thought Tony Stark was a little more pig-headed and close-minded than I felt was appropriate, but it was needed to keep the dispute going. That was really the only weakness for me. But I hear that a lot of his motivations are based off events in Age of Ultron, so it might all make more sense to me after watching that!
I felt that the views and actions of Steve Rogers (Captain America) and Natasha Romanova (Black Widow) were very believable, and I could follow their logic the whole time. The other characters seemed to take sides more based on who they chose to follow rather than which side they felt was "right." It was clear the writers chose to break up pairings (like Hawkeye and Black Widow, or Vision and Wanda) for the sake of drama, but it was believable enough for me.

Captain America: Civil War was full of truly epic action sequences, some really beautiful battle shots, and lots of great staging and special effects. I got to see it in 3D IMAX, and to me, CGI often starts to really stand out as being fake because you can see it so intensely in this format. But ILM did a fabulous job blending everything together, and there were only a few moments where I was distracted by noticing that a character didn't move like a real person. Mostly I was impressed with all the "pew-pew" and "POW!" Hahaha!

The only thing that really bothered me, and they got it over with quickly so I was able to move on, was the argument behind forming the government oversight. Basically (you see it in the preview above,) this guy goes, "Look at all the collateral damage and deaths you caused..." and left out the "...saving us from the horrible [aliens/villains] who were going to cause even more death and destruction..." Um. So accidentally killing a few people to save hundreds is a bad thing? I completely understood the world's governments' desire to regulate people with super-human abilities or really cool technology that makes them, well, super. But to approach it from a "some people died because of you" angle using examples of events where masses more of other people were saved because of them was pretty weaksauce. But not enough to ruin the premise behind the division of those wanting government oversight to assuage guilt or to try and work within the system versus those worried about being used and controlled to further an agenda.

If you like the Marvel Universe, this movie is a must-see. If you like superhero or action movies, but aren't up-to-date on the Marvel Universe, it's still a great movie, but be prepared to have a huge portion of the plot and character motivations not make any sense without the back story. Go with someone who can tell you what's happening! Lots of great new characters, lots of Marvel's trademark interwoven humor and deep moral themes, and lots of the famous characters you came to see in action once again!

MOMables Monday: The Best Homemade Kids' Lunches on the Planet cookbook

Laura Fuentes, creator of the MOMables lunch menu planning service has just released a new book, The Best Homemade Kids' Lunches on the Planet! From what I've seen so far, reading all the advice bits at the beginning and looking through all the recipes (and even trying a few,) this book lives up to its title!

In addition to getting a copy to review after it was released (woot!) I got to test-cook one of the recipes months ago! I made a batch of cornbread muffins as instructed for Hubby, then did a few simple substitutions to make a gluten-, egg-, and dairy-free batch for the girls and I. (A gluten-free flour mix with xanthan gum already in it, non-dairy milk, and I made ground flax egg substitute.) Both versions were voted yummy from their respective taste-testers!
The book has some recipes and ideas that you may have seen on the MOMables blog or in the MOMables menu service, but here they're all in one convenient place! Plus there are so many more! Ideas for prep-ahead and grab-and-go breakfasts, making extra ingredients at dinner to repurpose for lunch recipes, using up dinner leftovers for lunch... So many ideas for making lunch prep quicker and easier! Laura even talks about where you can save money and where not to cut corners on grocery items!

Gutsy Chewy - A Friend to your Gut, Naturally!

In my quest to keep our household free from artificial petroleum-derived ingredients, I am always on the lookout for dye-free and naturally-flavored medications and remedies... that actually work. I suffer from acid reflux, IBS, and other fun GI issues, and my oldest routinely complains of a tummy ache (although less so all-around, now that we're all gluten-free and I went dairy-free!) Ironically, I had a hard time reviewing these. Not because they don't work, but because I seldom have gut issues now that I've changed my diet! But I do get accidentally "glutened" or eat something that has dairy in it without looking first (I'm looking at you, Glutino oreos!) And once in a while I just eat too much and feel a little "bleah" inside.

Pros:

Cons:
  • While the flavors and texture were far from inedible, they weren't my favorites either. I have no problem taking these to help ease symptoms, but I'm not making excuses to justify having another. On the plus side, my kids aren't lying about tummy aches in order to get more!
I prefer the orange flavor, but the girls don't seem to care which they get. The older one doesn't love them enough to lie about stomach pains, but the little one totally does. I let her have half a tablet, if I can't distract or stall her out of it...

Dinner is... Plated!

I saw an ad for Plated meal kits purely by accident, and decided to try them out! Gourmet recipes and ingredients delivered right to your door? It's like having a private meal planner who even buys the groceries! And no wasted "extras" ...you know what I mean... You buy a bunch of some unusual ingredient like dill or buttermilk for one recipe, then the rest goes bad in the fridge. Am I right?
Pros: 
  • You can set up a "taste profile" to exclude certain types of ingredients or dishes to be selected and auto-delivered to you, or you can select your own dishes up to several weeks in advance!
  • Unless you have too many dietary restrictions, you can easily order all gluten-free, all dairy-free, or all vegetarian dishes each week! And most of them only require minor substitutions or omissions to make them gluten, egg, nut, or dairy-free.
  • Unlike restaurant food, with their massive cross-contamination issues (for intolerance and allergy peeps) and mystery ingredients, you know exactly what's going into your food!
  • Most dishes only take 30-40 minutes total prep time, which is totally doable on a busy week night! And the instructions and recipe tips help even the most novice chef turn out some fancy gourmet successes! 
  • 2 plates makes enough for all 4 of us (the little ones are only 5 and 2, with smallish appetites,) with a little supplementation to make it more kid-friendly for the little ones, or enough for Hubby and I and leftovers for one lunch.
  • Instead of having to flip through recipe books or the internet for ideas, then digging around your fridge and pantry finding all the ingredients, everything is packaged together in just one or two bags per meal - it's super easy to just grab your bundle and recipe card and get to work!
  • Plated uses local (to them) and seasonal ingredients (when they can.)
  • 4 plate minimum per order, but no monthly minimum - you can skip as many weeks as you'd like! Only $12 per plate with membership ($10-12 per month) or $15 per plate for pay-as-you-go.
Cons:
  • Unless your kids have really sophisticated palates, these aren't very kid-friendly. But my girls usually enjoy at least one element of each meal, and I can easily supplement with other leftovers or more kid-friendly fare I have in the freezer.
  • I'll admit it, they're kind of costly. $12 per plate is only a little less than what you might pay for dinner at a restaurant, and you have to actually cook it all yourself. But $12 restaurant meals aren't this fancy, and if you order these instead of eating out, you can avoid cross-contamination from ingredients that aren't safe for your family, and know exactly what's going into your food!
  • There is a lot of plastic waste, since each item is individually bagged or bottled in the right amount called for in the recipes. But that also means that it's easy to segregate out any ingredients we're intolerant to without worrying about cross-contamination!
  • They don't deliver to all areas. They currently only service 80% of the US. But it's easy to find out if they cover your area!

I opted to order the minimum 4 plates each week, so got 2 plates each of 2 different dishes. I figured I could handle cooking real meals at least twice a week... I loved my first order enough that I've been ordering weekly since! 

Week 1: Roasted Eggplant with Pine Nuts, Raisins, and Parsley
I got to select my first two dishes, and found gluten-free ones that could easily be made dairy-free with some minor substitutions I had at home.

I changed the prep a bit by soaking the eggplant chunks in salt water for 20-minutes or so to make them less bitter, but Hubby said they were still too bitter for his liking.
Instead of the buttermilk they sent, I used a vegan cheat and used vinegar and rice milk, and subbed in some vegan Greek-style yogurt for the yogurt they sent. (I happened to have some on hand. Normally I wouldn't, so I would just have used the coconut cream that separates in the canned coconut milk as a thickener instead.) And I subbed quinoa that I keep on-hand for the farro wheat berries that they sent to go with.

I didn't need to sub anything out to make this one gluten- and dairy-free. Nom! I did opt to roast the shallot with the other veggies, since I'm not a fan of raw onion-y flavors. The mushrooms were ah-mazing, by the way. I had to, erm, taste-test them to make sure they were done...


Week 2: Pistachio Crusted Tofu with Frisee and Grilled Carrots
For my second week, I couldn't figure out how to customize my order, but they happened to send two vegetarian dishes that were easy to customize to our dietary restrictions.

I opted to cut my tofu even thinner than the recipe said, since I don't like big mouthfuls of tofu. Which meant I'd need more "breading." So I supplemented with homemade bread crumbs made from smashing up all the broken gluten-free crackers I'd been saving for just such an occasion! Made these taste a lot oilier than they would have otherwise, I imagine, but they were still pretty good!

I made smaller nugget-sized tofu bites for the girls, and they went over fairly well. And the little one loved the salad. The frisee was unpleasantly bitter, but I also take my sweet time making these, so it might have tasted better closer to the arrival date. I took the extras and mixed it into my base salad mix and it was better then.

The second dish this week, Creamy Roasted Fennel, was crazy good, but I had to leave before it was done, and it was dark by the time I got back to eat what was left. So no good photos. But suffice it to say it was so delicious that Hubby told me that I was lucky that he loved me - otherwise there wouldn't have been any leftovers to come home to!


 Week 3: Dijon Pork Medallions with Roasted Broccolini and Smashed Potatoes
I was still figuring out how to adjust my "tastes" for the auto-order or customize my order - I thought you had to wait until a certain day to order for the following week, and then everything that was "safe" for me was sold out! But it turns out you can change the date and order for several weeks in advance! But while I was figuring this out and messing it all up, they auto-shipped me a meat dish. I don't like handling meat, and we eat mostly vegetarian, so I was a little upset, as I had basically missed the learning-curve window to fix it by just one day! Plated customer service totally made it right, even though this one was totally my fault for being too inept to figure out their website.

I didn't have to make any changes to make this gluten- and dairy-free, but I did add some extra garlic to the potatoes. We're a garlic-loving family! Frankly, I was amazed at how well this turned out. I did manage to burn myself on the oven door, but otherwise everything came out perfectly. The whole family enjoyed this one. Despite my vegetarian leanings, my girls are voracious little carnivores!

The other dish auto-shipped to me this week. I wouldn't have ordered it, because the word "risotto" intimidates me. On TV, I hear Chef Ramsey yelling at more people over weak risotto than anything else! But I followed their directions and the rice came out amazing! Sadly, the radicchio was so bitter it ruined the whole dish for us. The girls liked the risotto part though, since I'd pulled some out for them before mixing in the roasted veggies.


Week 4: Shakshuka with Seared Haloumi (and Tofu)
I try to avoid dishes that feature too much dairy or are really spicy, so I hadn't originally ordered this one. Plus I'm avoiding eggs too, for ethical and health reasons.
I had ordered some quinoa veggie burgers instead, and just bought gluten-free buns to sub in. So I was surprised to find these ingredients bundled up in my order instead! I contacted Plated and their awesome customer service totally took care of me, plus gave me the link to the recipe pdf, since I'd gotten the card for the veggie burgers.

To make this more palatable to me, I tossed out the poblano pepper, figuring (correctly) that the aleppo chili powder in the spice mix would be plenty spicy. I also pressed, thinly sliced, and seared tofu instead of the Haloumi cheese for the toddler and I. (Haloumi is usually goat or sheep's milk, which is safe for us, but theirs had cow milk in it as well. *sigh*) I did sear the cheese up after, so our tofu wouldn't be contaminated, for Hubby and Z, who looooved it!

The girls just got some leftover rice, frozen veggies, and then either the tofu or Haloumi I'd made for dinner.

Tofu Mushroom Lettuce Cups with Scallion Pancakes
The pancakes were supposed to be fava bean and scallion, but I waited too long and the fava beans had gone bad. I thought about thawing some frozen edamame or trying canned beans, but in the end decided not to bother. I also opted to add garlic to them. Garlic makes everything taste better!

For these, I only had to sub out the flour for the flatbread/pancakes. I wasn't sure if something like this would need a grain/starch flour mix or xanthan gum or baking powder, like most gluten-free subs need, and I was feeling way too lazy to mess with all of that. So instead I used some unsweetened Wholesome Chow pancake mix I had on-hand, which had all that stuff already. I dusted my surfaces and supplemented with whole-grain brown rice flour too, since even adding way less water than called-for made the dough crazy sticky. But I thought they turned out great!

I worried that the girls wouldn't like the scallions, so I made some garlic-only ones for them. But I preferred the flavorfulness of the scallion and garlic ones. Hubby thought they were too bland, but they reminded him of fritters, so he and the girls ate theirs with ketchup and mustard, and liked them. And both girls had some of the tofu-mushroom mixture, but didn't love it. I just added more salt and liked them just fine!

The Verdict
Hubby has been loving the variety - my normal repertoire is limited to one-pot chunky stewps (stew/soups,) curries, and roasted or steamed veggies. It's taken a little work juggling multiple items; some in the oven, some on the stove; but the directions help you figure out what order to do everything in, and what can be done while something else is happening. And unlike a book recipe, these cover the main and side(s,) so you don't have to worry about not only deciding what all to make, but also how to weave the prep together from two or three different recipes!
And now on those nights where I only have an hour or less and can't possibly figure out what to make, find all the ingredients, and put it all together; instead of going out to eat or copping out and settling for frozen nuggets or pizza, I can whip up a tasty gourmet meal!

Quick and Healthy Salad Options with the Fresh Express 30-Day Salad Swap

I'm a fan of salads, so when I was given the opportunity to try some Fresh Express Salad mixes, I jumped at the chance!

I chose the Fresh Express Veggie Lover's mix for myself, since it had an assortment of lettuces, as well as carrots and radishes and peas. Nom!

Since the Fresh Express salad mix already had a nice assortment of veggies, I only added some cherry tomatoes. I packed my add-ons separately to keep them crunchy. They include hemp hearts, chia and sunflower seeds, raisins, and vegetarian coconut bacon bits. And rosemary vinaigrette dressing. Yummy! Kind of like a BLT sandwich, only much healthier!

Since Fresh Express sent me coupons for wayyyy more salad than I could possibly eat in time, I decided to share the love and feed the staff at my Kindergartener's Elementary school! I chose four Salad Swap recipe ideas to make for the 50+ faculty at school.

Red, White and Blue Salad
Instead of blueberry pancakes, why not try a Red, White and Blue Salad? This is the one I would choose for myself. I love fruit in my salads!
This salad uses Fresh Express 50/50 Mix, plus strawberries, blueberries, pear, Gorgonzola, lemon zest, and raspberry vinaigrette dressing. I had prepped all the ingredients the night before, and the sliced pears didn't make it. They were all brown and mushy the next morning. So I had to sub in diced apples last-minute.

BLT Salad
 
Instead of a BLT sandwich, try a BLT salad! This salad uses Fresh Express Butter lettuce mix plus tomatoes, bacon, avocado, croutons, cheddar cheese, and Ranch dressing.
I couldn't find any pre-made croutons at the store that didn't contain an artificial petroleum-derived preservative, so I ended up having to buy a hunk of French bread and making my own croutons. I hate making ingredients! No clue how they turned out, since I bought gluten bread and couldn't taste-test.

Shrimp Pad Thai Salad
 
Instead of Pad Thai, try a Pad Thai salad! This was both the easiest and the hardest one for me to make. It was easier in that I just had to buy the Asian Kit and top it with some shrimp. But I don't like cooking with or touching meat. I bought pre-cooked shrimp, and opted for the less exciting little popcorn shrimp versus the larger ones with tails called for in the recipe. Hubby ended up taking the morning off of work to help me wrangle the toddler and assemble all the salads at the school, so luckily he was there to distribute the shrimp so I didn't have to touch them!

Chicken Salad... Salad!
Instead of a Chicken Salad Sandwich, try a Chicken Salad with grapes and apples and celery! This salad swap uses the Fresh Express Spring Mix and a home-made honey mustard vinaigrette (recipe on the free Salad Swap app) along with some classic chicken salad mix-ins. I chose a rotisserie chicken for this one, which Hubby dismantled and shredded up for me, and added to the salads later. 

I made the dressing. 

52 plates take up a lot of space! I had the employee break room surrounded by plates of healthy salad swaps! I wrote a little info on each option up on the white board, along with a note to thank the staff for everything that they do, and then left to let them start trickling in for their lunch breaks and enjoy their salads in peace! I did get several rave reviews later that afternoon when I came back to pick Z up after school though, so it sounds like these Salad Swaps were a big hit!

So what do I think about Fresh Express Salad mixes?

Pros
  • Fresh Express salads are thoroughly washed, rinsed, and gently dried before being sealed. (Unlike my home-prepped salads. Mine are lucky to get a quick rinse! And I'm too lazy to wait for it to dry. Bah!)
  • Their patented “Keep-Crisp®” breathable bags help them keep their just-picked freshness, without any preservatives. Since most companies use petroleum-derived preservatives, Mama's a big fan of preservative-free!
  • It was amazingly nice to not have to wash and dry and chop each ingredient to have a rainbow of different veggies in my salad. And mind-staggeringly nice to not have to chop and prep all that myself for 50 people! Just chopping the few toppings I had to prep had us up late the night before!
  • Fresh Express has a dizzying array of different mix options, from lettuce assortments to lettuce and greens to lettuce and veggies; as well as kits with everything you need from croutons and other toppings to dressing!
Cons
  • I almost exclusively buy organic, and while Fresh Express has a line of organic options, they weren't available at the store near me. 
  • I'm not a fan of the package waste, but realistically, most produce comes with a package or is put in a plastic bag when you buy it anyway. So probably a wash there, if not actually less packaging waste!
  • I personally prefer my salads chopped smaller, so I can get a little of everything in each bite. Plus I dislike having to bite through stuff on my fork. I prefer to be able to jam it all in my face at once. But that's a personal preference, and not enough of a big deal to stop me from buying these again in the future. The ease and variety of the Fresh Express options far outweigh the inconvenience of having to actually bite the lettuce. Hahaha!
