Hail Merry Mama Lunches

Tuesday, 11/13/12 - When Hail Merry offered to send me some of their all-natural treats to try, I said I'd love to. Anything but macaroons. I don't really like the taste or texture of macaroons... 
They sent me macaroons. Haha!

But boy, am I glad they did! They have a much creamier texture than the macaroons I've had before. The chocolate ones were almost like fudge! Little Z hasn't liked macaroons in the past either. But she loved the one I let her and Baby try... The rest are MINE! So I've been packing them as a treat in my lunches.

This was my first time attempting to freeze guacamole. I used a heart-shaped ice cube tray, just for fun. Plus I don't really have a "regular" shaped one! 
The guacamole cubes thawed by lunchtime, but had turned brown. It was fine for me, 'cuz I got my big girl panties on and they tasted normal. But I don't think brown guacamole would fly with Little Miss Pickypants. Too bad. Frozen guacamole shapes would have been a fun addition to our lunch repertoire. 

My macaroons came out juuuuuuust fine though!

You can read more about my snowflake salad here. I just love not only how adorable the macaroons look in my lunch, but they were the perfect guilt-free sweet treat! Only 4 grams of fat and 2 grams of sugar each, plus 1 gram of fiber as a nice bonus!

  2. A little bit of lemon juice would probably keep your guac from turning brown. (Or lime!)
