Lunching Leftovers - Pizza Skewers

I got the idea to make these from a post by Chef Corey (from Family Fresh Meals) for MOMables. Of course I changed the ingredients to fit Z's "dietary restrictions" (pickiness!) and what I actually had on-hand!

Some heart skewers, silicone muffin cups, and a flower veggie cutter jazzed up a quick and simple lunch!

Leftover Pizza Skewers
Olive, ham, and leftover pizza skewers; marinara sauce,
pomegranate arils, carrots and broccoli
I chopped a slice of leftover pizza into little bites, then threaded them along with strips cut from a slice of ham and some whole olives onto skewers. Easy as [pizza] pie!
I included some leftover marinara sauce that had come with the bread sticks in an EasyLunchboxes Mini Dipper for her to dip her skewers in. Dips are fun! She ended up dipping her broccoli in it as well, and asked for more for her snack that afternoon for preschool. Ummm, YES!

Tried-It-Tuesdays - December 2012

This past month I did a lot of new things. I made my first pumpkin pie. Not only that... I made it from an actual pumpkin that I cooked and pulped myself! In fact, I made four dishes to share at our various Thanksgivings...
What wasn't new though, was that I screwed them all up. Yup.

1. The potatoes, carrots, and onions for the mashed potatoes got burnt in the pressure cooker. (Gave it a "smokey" flavor... My mom claimed not to notice. She must have eaten the ones my brother brought. Or she's a liar.)

2. My Pink Dip for the veggie tray I brought (chopped myself from the organic farm I get our produce at. No pre-made veggie trays here!) got messed up. I had bought two bricks of cream cheese at various times in advance. One disappeared off the face of the planet. The other never made it into the fridge. Eww. I had to sub in whipped cream cheese (that was on the wrong end of the expiry date!) and some Ricotta to stretch it out, since I had planned on a double batch. Ugh. Tasted fine. Texture was naaaaaasty.

3. I made a roasted root vegetable dish with parsnips, celery root, turnips, rutabaga, potatoes, carrots, and onions. It turned out GREAT... except it wasn't ready in time so no one ate it at the first Thanksgiving, and I put it in the oven to reheat and no one took it out and put it on the table with the rest of the food at the second. My brother-in-law cooked it up with eggs for breakfast the next day and said it was really good though.

4. And my pies. My pumpkin pies. I found dye-free pie crusts (yes. Darn you Pillsbury and your fake colors and preservatives!) I had cooked and scooped and pureed my organic sugar pumpkin. I started out with an online recipe, so added the can of evaporated milk. Then my sister suggested I use her awesome recipe. So I switched over and added the spices as listed for hers. We had to use the tetchy oven, that cooks 15 degrees too hot. Tempting fate, but it worked beautifully! They looked and smelled amazing. The texture was creamy and perfect.
The problem? The first recipe called for evaporated milk and sugar. My sister's called for sweetened condensed milk. Do you see where I went wrong? That's right. No sugar. Argh. And it's not like I know what I'm doing. How was *I* supposed to know you're supposed to taste the batter before baking, especially when using fresh pumpkin (which can vary more in sweetness than canned.)
Oh well. I left them there and they experimented with drizzling on maple syrup and honey the next day. Plus my brother-in-law will eat anything. So they didn't go to waste.

Fun Bagel Skewers Bento

Wednesday 10/17/12 - Baby's preschool day, so lunches all around, plus breakfast for me and Baby during class. (This was before Z started her morning preschool, so she came to class with us.)

Blueberry Bagel Skewers
Broccoli, Romanesco cauliflower, Ranch, strawberries, blueberry bagel with cream cheese

A simple nut-free lunch! I cut a blueberry bagel with cream cheese into bits and used some fancy wooden skewers to make it more fun.

Mama's Breakfast
Toasted "everything" bagel with cream cheese, cherry tomatoes,
breakfast cookie, golden raspberries
Since Z didn't like them, I've been eating up the MOMables Breakfast Cookies on my own. This was one baked in a heart-shaped muffin pan.

Mama's Lunch

strawberries, raspberries, carrot scraps, raisins, dried edamame, chia seeds, dressing
My lunch included more MOMables Breakfast Cookies, baked in mini muffin cups.

The carrot scraps were from Z's Hello Kitty penguin lunch earlier in the month. Fun! And my dry salad toppings are stored in the EasyLunchboxes Mini Dipper.

Monday
Carrots, pomegranate arils, TJ's White Cheddar Popcorn
I put the pomegranate arils in a flower cup because it's slightly taller and reaches the top of the sandwich box. And filled the space so I didn't have to pack in more food than she would eat.

Tuesday
Green honey yogurt, nut-free TJ's Berry Medley Granola
The Sassy Feeding Bowl is perfect for a yogurt and granola snack.
I lost her pink polka-dot insulated snack bag in the house somewhere over the holiday weekend, so we used a Hello Kitty Sammy Sak this week. I got it from a bento buddy, but sadly I can't remember which one. Sorry Mama!
The thin little ice pack came from a Zak Hello Kitty ChillPak. It thaws pretty quickly, but is fine for a short time, like during her 2.5 hour class.

Wednesday
Grapes, Trader Joe's Peppermint Pretzel Slims
As a special treat, I put some of Trader Joe's seasonal Peppermint Pretzel Slims in a silicone muffin cup. Just two though.

Box came from a nesting set by Paperchase from Target.

Thursday
TJ's Candy Cane Joe Joes, TJ's Peppermint Pretzel Slims, broccoli and carrots, marinara sauce 
The marinara sauce in the EasyLunchboxes Mini Dipper was added by special request. She had had some in her lunch and enjoyed dipping her veggies in it, so asked for seconds. Umm, YES!

Leftovers - October 2012

Wednesday, 10/3/12 -
Mama's Lunch
Hummus, broccoli, plum, cherry tomatoes, orange cauliflower, carrot sticks, leftover Veggie Curry
I packed this the same day as her Hello Kitty onigiri. Since we were at Baby's preschool, I knew I could pull out and microwave the silicone cup full of curry there before leaving to have lunch in the car.

Mama's Breakfast Snack
Breakfast cookies, apple slices
Since Z didn't like them, I've been eating the MOMables Breakfast Cookies myself! I try to pack things I can share with Baby, since we eat during her class.

Friday, 10/5/12 -
Chobani Champions Vanilla Chocolate Chunk, ham and cheese sandwich
Just a random lunch, but I stuck a pick in her sandwich to hold it together, and added a yogurt, which is more than I normally do for a slap-it-on-a-plate lunch at home!

Tuesday, 10/9/12 -
Mama's Lunch
chocolate covered strawberries, cheese quesadilla scraps, cherry tomatoes; spinach
salad w/squash, purple cabbage, carrots, dried edamame, chia seeds, raisins, dressing
This was packed the same day as her mummy lunch. I got Z's quesadilla scraps, plus some chocolate covered strawberries for myself! YUM!
